Units Scale

For the filling:

  • 4 ripe bananas, sliced
  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup dark rum (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the cobbler topping:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted

Optional: vanilla ice cream for serving

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
  2. Prepare the filling: Melt butter in a skillet, add brown sugar, cinnamon, nutmeg, and salt. Cook until bubbly, then add vanilla and rum. Add banana slices and cook briefly.
  3. Assemble the cobbler: Pour the banana mixture into the baking dish. In a separate bowl, mix flour, sugar, baking powder, salt, milk, and melted butter. Pour over the bananas.
  4. Bake: Bake for 35–40 minutes until the top is golden and a toothpick inserted into the topping comes out clean. Let cool slightly before serving.

Notes

  • Omit the rum if desired—vanilla alone still provides great flavor.
  • Best served warm with a scoop of vanilla ice cream for the full bananas foster effect.
