Mashed Potato Mixture:

  • 2 cups mashed potatoes (well-seasoned and cooled)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Coating:

  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Prepare the Potato Mixture: In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan, minced garlic, parsley, salt, and pepper. Mix well until fully incorporated.
  2. Shape the Potato Pops: Scoop out tablespoon-sized portions and roll into balls. Place on a baking sheet and freeze for 15–20 minutes to firm up.
  3. Coat the Potato Balls: Prepare three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Roll each chilled potato ball in flour, then dip in egg, and finally coat in panko, pressing gently to adhere.
  4. Fry the Potato Pops: In a deep skillet or saucepan, heat about 2 inches of vegetable oil to 350°F. Fry the potato pops in batches, turning occasionally, until golden brown and crispy—about 3–4 minutes.
  5. Serve: Remove with a slotted spoon and drain on paper towels. Serve warm with your favorite dipping sauce.
