1lb boneless, skinless chicken breasts, cut into bite-sized pieces
8oz pasta (penne or your choice)
2 tablespoons olive oil
4 tablespoons unsalted butter
5 cloves garlic, minced
1/2 teaspoon paprika
1/2 teaspoon Italian seasoning
Salt and pepper to taste
1/4cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Instructions
Cook the pasta according to package instructions. Drain and set aside.
Season chicken pieces with paprika, Italian seasoning, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6–8 minutes until golden and cooked through. Remove and set aside.
In the same skillet, reduce heat to medium and add butter. Once melted, stir in the garlic and sauté for 1–2 minutes until fragrant.
Return chicken to the skillet and toss in the garlic butter sauce.
Add cooked pasta and Parmesan cheese. Toss everything to combine and heat through.
Garnish with chopped parsley and serve immediately.
Notes
Add a splash of chicken broth or pasta water if you prefer a saucier consistency.
