- 6 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels.
- In a small bowl, mix together the olive oil, garlic powder, onion powder, oregano, basil, thyme, paprika, salt, pepper, and red pepper flakes.
- Rub the spice mixture all over the chicken thighs.
- Place the chicken thighs skin-side up on a baking sheet lined with parchment paper or in a baking dish.
- Drizzle with lemon juice.
- Bake in the preheated oven for 35–45 minutes or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden.
- Let rest for 5 minutes before serving.

- Use boneless chicken thighs for a quicker cooking time.
- Marinate the chicken with the spice rub for 30 minutes for deeper flavor.
- Serve with roasted vegetables or a side of pasta for a complete meal.
