8oz mascarpone cheese (softened)
1/2cup powdered sugar
1 teaspoon vanilla extract
For the Raspberry Layer:
1/2cup raspberry jam
1/2cup water
2 tablespoons raspberry liqueur (optional)
For the Assembly:
24 ladyfinger cookies (savoiardi)
2cups fresh raspberries
1 tablespoon cocoa powder (for dusting)
Additional raspberries and mint leaves for garnish (optional)
Instructions
Prepare Mascarpone Cream: Whip heavy cream until soft peaks form. Blend mascarpone, powdered sugar, and vanilla until smooth. Fold whipped cream into mascarpone mixture.
Prepare Raspberry Layer: Combine raspberry jam, water, and raspberry liqueur. Dip ladyfingers in mixture and layer in a dish.
Assemble Tiramisu: Spread half of mascarpone cream over ladyfingers. Add a layer of fresh raspberries. Repeat with remaining ingredients. Refrigerate for at least 4 hours.
Serve: Dust with cocoa powder and garnish with raspberries and mint leaves.
Notes
For a kid-friendly version, omit the raspberry liqueur.
