For the crust:
1 and 1/2 cups chocolate cookie crumbs
1/4cup granulated sugar
1/3cup unsalted butter, melted
For the filling:
3 packages (8 ounces each) cream cheese, softened
1cup granulated sugar
1/2cup sour cream
1 teaspoon vanilla extract
3 large eggs
1/2cup semi-sweet chocolate chips, melted and slightly cooled
Preheat the oven and prepare the crust: Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan. Mix chocolate cookie crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes. Let cool.
Make the filling: Beat cream cheese until smooth. Add sugar, sour cream, and vanilla. Mix well. Add eggs one at a time, beating after each. Pour half over the crust. Stir melted chocolate into the remaining filling and pour over the plain layer. Swirl strawberry preserves on top.
Bake the cheesecake: Bake for 55–65 minutes until set but slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour. Remove, cool to room temperature, then chill for at least 4 hours or overnight before serving.
