Units Scale

For the bars:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)

For the frosting:

  • 8 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease and line a 9×9-inch baking pan with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Combine wet ingredients: In a separate large bowl, whisk together eggs, oil, sugars, and vanilla until smooth. Stir in the grated carrots. Gradually add the dry ingredients to the wet, mixing just until combined. Fold in nuts if using.
  4. Bake: Pour the batter into the prepared pan and spread evenly. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
  5. Make frosting: For the frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beat until fluffy. Spread evenly over cooled carrot cake bars. Chill for 15–20 minutes before slicing for clean edges.

Notes

  • Store leftovers in the refrigerator for up to 5 days.
  • For extra richness, add ¼ cup crushed pineapple (drained) to the batter.
