8oz cream cheese (softened)
1/4cup unsalted butter (softened)
1 1/2cups powdered sugar
1 teaspoon vanilla extract
Instructions
Preheat oven: Preheat oven to 350°F (175°C). Grease and line a 9×9-inch baking pan with parchment paper.
Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Combine wet ingredients: In a separate large bowl, whisk together eggs, oil, sugars, and vanilla until smooth. Stir in the grated carrots. Gradually add the dry ingredients to the wet, mixing just until combined. Fold in nuts if using.
