  • 1 cup hot brewed espresso or strong coffee

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

Additional:

  • 1 cup chopped walnuts
  • 1/4 cup brown sugar for topping
  • 1/2 teaspoon ground cinnamon for topping

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch round or square baking pan.
  2. Prepare the dates mixture: Place chopped dates in a bowl, pour hot espresso over them, let sit for 10 minutes, then mash slightly with a fork.
  3. Combine dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Prepare wet ingredients: In a separate bowl, cream butter and sugar, beat in eggs and vanilla. Stir in date-espresso mixture and sour cream.
  5. Combine and bake: Fold in dry ingredients and walnuts, pour batter into pan. Mix brown sugar and cinnamon for topping, sprinkle over batter. Bake for 35–40 minutes, then cool before serving.
