Cookies:

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups quick oats
  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. Cream together ingredients: In a large bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  4. Stir in mix-ins: Stir in the oats, mini marshmallows, and chocolate chips.
  5. Bake: Drop rounded tablespoons of dough onto the prepared baking sheets. Bake for 10–12 minutes or until lightly golden. Cool on the baking sheet before transferring to a wire rack.

Notes

  • To prevent excessive melting, chill the dough before baking.
  • For a bakery-style appearance, press additional marshmallows and chocolate chips on top before baking.
