Main Salad:
2cups cooked chicken breast, shredded or chopped
4cups shredded Napa or green cabbage
1cup shredded carrots
1cup red bell pepper, thinly sliced
1/2cup edamame, shelled and cooked
1/4cup green onions, sliced
Additional Toppings:
1/2cup crunchy chow mein noodles
1/4cup sliced almonds or chopped cashews
2 tablespoons toasted sesame seeds
For the Dressing:
1/4cup rice vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon honey or maple syrup
1 tablespoon mayonnaise (optional for creaminess)
1 teaspoon grated fresh ginger
1 clove garlic, minced
Salt and pepper to taste
Instructions
Main Salad: In a large bowl, combine the chicken, cabbage, carrots, bell pepper, edamame, and green onions.
For the Dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, mayonnaise (if using), ginger, garlic, salt, and pepper until smooth.
Pour the dressing over the salad and toss well to coat.
Just before serving, sprinkle with chow mein noodles, almonds or cashews, and sesame seeds for added crunch. Serve chilled or at room temperature.
Notes
You can use rotisserie chicken for convenience.
For a vegetarian version, replace chicken with tofu or more edamame.
