  • 1/2 cup edamame, shelled and cooked
  • 1/4 cup green onions, sliced

Additional Toppings:

  • 1/2 cup crunchy chow mein noodles
  • 1/4 cup sliced almonds or chopped cashews
  • 2 tablespoons toasted sesame seeds

For the Dressing:

  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon mayonnaise (optional for creaminess)
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Main Salad: In a large bowl, combine the chicken, cabbage, carrots, bell pepper, edamame, and green onions.
  2. For the Dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, mayonnaise (if using), ginger, garlic, salt, and pepper until smooth.
