This hearty Crockpot Sausage Casserole is a savory and comforting slow-cooked meal perfect for busy days. Featuring browned pork sausages, tender vegetables, and creamy cannellini beans simmered in a flavorful tomato and herb broth, this recipe delivers a delicious British-inspired dish that requires minimal hands-on time. It’s ideal for serving with crusty bread or over mashed potatoes for a satisfying dinner.

Ingredients

Scale

Vegetables and Aromatics

  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 red bell pepper, chopped

Proteins

  • 6 pork sausages, browned and sliced
  • 1 can (15 oz) cannellini beans, drained and rinsed

Liquids and Sauces

  • 1 tablespoon olive oil
  • 1 can (14 oz) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 cup low-sodium chicken broth

Herbs and Spices

  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Sauté Aromatics: Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 4–5 minutes. Stir in the minced garlic and cook for another 1–2 minutes until fragrant.
  2. Brown Sausages: Using the same skillet, brown the pork sausages on all sides over medium heat until fully cooked and nicely caramelized. Remove from heat and slice into thick pieces.
  3. Combine Ingredients in Crockpot: Transfer the sautéed onion and garlic mixture into the crockpot. Add the sliced browned sausages, carrots, celery, red bell pepper, diced tomatoes, tomato paste, smoked paprika, dried thyme, bay leaf, and chicken broth. Stir well to combine.
  4. Cook Slowly: Cover the crockpot and cook on low for 6–7 hours, or on high for 3–4 hours, until the vegetables are tender and flavors are well melded.
  5. Add Beans and Season: About 30 minutes before serving, stir in the drained cannellini beans and season the casserole with salt and black pepper to taste. Remove the bay leaf before serving.
  6. Garnish and Serve: Garnish with chopped fresh parsley and serve hot, paired with crusty bread or over mashed potatoes if desired.

  • You can substitute pork sausages with chicken sausages or plant-based sausage alternatives for dietary preferences.
  • Add a dash of hot sauce to spice up the casserole according to your taste.
  • Serve this casserole with crusty bread or creamy mashed potatoes for a complete, comforting meal.
