Pierogi Casserole:

  • 1 (16 oz) package frozen potato and cheese pierogies
  • 14 oz kielbasa sausage, sliced into 1/4-inch rounds
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese, cubed

Creamy Mixture:

  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 small onion, diced
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Chopped chives or green onions for garnish

Instructions

  1. Sauté Onions: In a skillet over medium heat, melt butter and sauté diced onion until softened and golden, about 5 minutes.
  2. Mix Creamy Sauce: In a mixing bowl, combine cream cheese, sour cream, and chicken broth. Stir until mostly smooth.
  3. Layer in Crockpot: In a greased crockpot, layer half of the pierogies, kielbasa slices, and sautéed onions. Pour half of the cream cheese mixture over the top and sprinkle with half of the shredded cheddar. Repeat layers.
  4. Cook: Cover and cook on low for 3–4 hours or until heated through and bubbly.
  5. Serve: Stir gently before serving and garnish with chopped chives or green onions.
