2lbs ground beef
1cup breadcrumbs
2 large eggs
1/2cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1/4cup ketchup
2 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1/2cup ketchup (for topping)
2 tbsp brown sugar (for topping)
1 tbsp mustard (for topping)
Instructions
In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, 1/4 cup ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix until well combined.
Form the meat mixture into a loaf shape and place it in the crockpot.
In a small bowl, mix 1/2 cup ketchup, brown sugar, and mustard. Spread this mixture over the top of the meatloaf.
Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the internal temperature reaches 160°F (71°C).
Optional: Broil the meatloaf for 3-5 minutes after removing from the crockpot to caramelize the glaze.
Let rest for 10 minutes before slicing and serving.
Notes
You can add chopped bell peppers or carrots for extra flavor and nutrition.
Use lean ground beef to avoid excess grease in the crockpot.
Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
