Crockpot Meatloaf

A hearty and comforting Crockpot Meatloaf made with ground beef, seasonings, and topped with a tangy glaze. Perfect for a hands-off dinner that’s full of flavor and easy to prepare.

Ingredients

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 cup ketchup (for topping)
  • 2 tbsp brown sugar (for topping)
  • 1 tbsp mustard (for topping)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, 1/4 cup ketchup, Worcestershire sauce, salt, pepper, and thyme. Mix until well combined.
  2. Form the meat mixture into a loaf shape and place it in the crockpot.
  3. In a small bowl, mix 1/2 cup ketchup, brown sugar, and mustard. Spread this mixture over the top of the meatloaf.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the internal temperature reaches 160°F (71°C).
  5. Optional: Broil the meatloaf for 3-5 minutes after removing from the crockpot to caramelize the glaze.
  6. Let rest for 10 minutes before slicing and serving.

Notes

  • You can add chopped bell peppers or carrots for extra flavor and nutrition.
  • Use lean ground beef to avoid excess grease in the crockpot.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
