  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • 8 oz lasagna noodles, broken into pieces

For the cheese topping:

  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, chopped (for garnish)

Instructions

  1. Brown the sausage: In a skillet, brown the Italian sausage over medium heat until cooked through. Drain off excess fat.
  2. Crockpot assembly: In the crockpot, combine the cooked sausage, onion, garlic, crushed tomatoes, diced tomatoes, chicken broth, basil, oregano, salt, and pepper. Stir to combine.
  3. Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Add pasta: About 30 minutes before serving, add the broken lasagna noodles to the crockpot. Stir well.
  5. Cheesy topping: In a bowl, mix together the ricotta, Parmesan, and half of the mozzarella. Spoon the cheese mixture onto the soup in the crockpot. Sprinkle the remaining mozzarella on top.
  6. Serve: Once the cheese is melted, ladle the soup into bowls. Garnish with chopped fresh basil and enjoy!
