For the soup:
1pound ground beef
1 small onion, chopped
3 cloves garlic, minced
1 (28 oz) can crushed tomatoes
4cups beef broth
1 tablespoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
1 teaspoon salt
For serving:
8ounces broken lasagna noodles or broken lasagna-style pasta
1cup ricotta cheese
1cup shredded mozzarella cheese
1/2cup grated Parmesan cheese
fresh basil or parsley for garnish
Instructions
Cook the beef and onion: In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is softened.
Add garlic: Add garlic and cook for 1 minute more. Transfer the mixture to the crockpot.
Combine ingredients: Stir in crushed tomatoes, beef broth, Italian seasoning, red pepper flakes, and salt. Cover and cook on low for 6–7 hours or on high for 3–4 hours.
Add noodles: About 30 minutes before serving, add broken lasagna noodles and stir well. Continue cooking until noodles are tender.
Serve: Ladle soup into bowls and top each serving with a spoonful of ricotta cheese, shredded mozzarella, and grated Parmesan. Garnish with fresh basil or parsley.
Notes
For a vegetarian version, substitute ground beef with cooked lentils or mushrooms and use vegetable broth.
You can also add spinach or kale for extra greens.
