For the soup:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt

For serving:

  • 8 ounces broken lasagna noodles or broken lasagna-style pasta
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • fresh basil or parsley for garnish

Instructions

  1. Cook the beef and onion: In a large skillet over medium heat, cook ground beef and onion until beef is browned and onion is softened.
  2. Add garlic: Add garlic and cook for 1 minute more. Transfer the mixture to the crockpot.
  3. Combine ingredients: Stir in crushed tomatoes, beef broth, Italian seasoning, red pepper flakes, and salt. Cover and cook on low for 6–7 hours or on high for 3–4 hours.
  4. Add noodles: About 30 minutes before serving, add broken lasagna noodles and stir well. Continue cooking until noodles are tender.
  5. Serve: Ladle soup into bowls and top each serving with a spoonful of ricotta cheese, shredded mozzarella, and grated Parmesan. Garnish with fresh basil or parsley.

Notes

  • For a vegetarian version, substitute ground beef with cooked lentils or mushrooms and use vegetable broth.
  • You can also add spinach or kale for extra greens.
