Ingredients:

  • 2 pounds boneless skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup cream cheese, softened
  • 1/2 cup chicken broth
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Place chicken breasts in the bottom of the crockpot. Add black beans, corn, diced tomatoes with green chilies, taco seasoning, and chicken broth.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender and easily shreddable.
  3. About 30 minutes before serving, shred the chicken in the crockpot using two forks and stir in the softened cream cheese until fully melted and combined.
  4. Taste and adjust seasoning with salt and pepper. Serve over rice, in tortillas, or with chips. Garnish with fresh cilantro if desired.

  • Substitute Greek yogurt for cream cheese for a lighter version.
