This Crockpot Fiesta Chicken recipe is a delicious Tex-Mex dish that is easy to prepare and packed with flavor. Tender shredded chicken cooked with salsa, beans, corn, and taco seasoning, topped with cheese and served with your favorite toppings.

Ingredients:

  • 2 lb boneless skinless chicken breasts or thighs
  • 1 cup salsa (mild/medium/spicy)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 cup chicken broth
  • 1 packet taco seasoning or homemade mix (chili powder, cumin, garlic powder, onion powder, paprika, salt)
  • 1/2 cup shredded cheddar or Mexican blend cheese (optional)
  • Tortilla chips or warmed tortillas
  • Optional toppings: sour cream, avocado, chopped cilantro, lime wedges

Instructions

  1. Place chicken in slow cooker; sprinkle taco seasoning over top.
  2. Pour salsa and chicken broth around the chicken (not washing off seasoning). Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is very tender.

  3. Remove chicken and shred with two forks; return shredded chicken to crockpot and stir in drained beans and corn.
  4. If using cheese, sprinkle over top and cover until melted (about 5–10 minutes).
  5. Serve over tortilla chips like a nacho platter, in tortillas or taco bowls, and top with sour cream, avocado, cilantro, and lime as desired.

Notes

  • Use rotisserie chicken to shorten cook time—add beans and corn later.
  • Stir in chopped bell peppers or diced tomatoes for extra veggies.
  • For a low-sodium version, use reduced-salt broth and rinse canned beans well.
  • Keeps refrigerated up to 4 days; freezes well in portions.
