Chicken Parmesan Soup:
1 1/2pounds boneless, skinless chicken breasts
1 small onion (diced)
3 cloves garlic (minced)
1 can (14.5 oz) diced tomatoes (with juices)
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
4cups chicken broth
1/2cup grated Parmesan cheese
1 package (8 oz) cream cheese (cubed and softened)
1cup heavy cream
2cups baby spinach (optional)
8ounces cooked pasta (optional)
fresh basil and extra Parmesan for garnish
Instructions
Prepare the Soup Base: In a large crockpot, combine chicken, onion, garlic, diced tomatoes, Italian seasoning, salt, pepper, and chicken broth. Cook on low for 6–7 hours or high for 3–4 hours.
Shred the Chicken: Remove chicken, shred it, and return it to the crockpot.
Add Cheese and Cream: Stir in Parmesan, cream cheese, and heavy cream until smooth.
Optional Ingredients: Add spinach and cooked pasta if desired. Cook for an additional 10–15 minutes.
