Chicken Parmesan Soup:

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces rotini pasta (or any short pasta)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Fresh basil leaves for garnish

Instructions

  1. Prepare the Soup Base: Place chicken breasts in the slow cooker and add onion, garlic, crushed tomatoes, tomato sauce, chicken broth, Italian seasoning, dried basil, red pepper flakes, salt, and black pepper. Cook on low for 6–7 hours or high for 3–4 hours.
  2. Shred the Chicken: Remove the cooked chicken, shred it, and return it to the slow cooker.
  3. Add Pasta: Stir in the pasta and cook on high for an additional 20–25 minutes, or until pasta is tender.
  4. Finish the Soup: Before serving, mix in mozzarella cheese, Parmesan cheese, and parsley. Ladle the soup into bowls and garnish with fresh basil.

Notes

  • For a creamier texture, stir in a splash of heavy cream at the end of cooking.
  • If you prefer firmer pasta, cook it separately and add it to the soup just before serving.
