4 boneless skinless chicken breasts

  • 1 (10.5-ounce) can cream of chicken soup
  • 1 (6-ounce) box stuffing mix (such as Stove Top)
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 1/2 cups frozen mixed vegetables (optional)
  • chopped fresh parsley for garnish

Instructions

  1. Spray the inside of the crockpot with nonstick cooking spray. Place the chicken breasts in a single layer at the bottom of the crockpot.
  2. In a medium bowl, whisk together the cream of chicken soup, sour cream, garlic powder, onion powder, and black pepper. Spread this mixture evenly over the chicken.
  3. Sprinkle the dry stuffing mix on top. Pour the chicken broth evenly over the stuffing to moisten.
  4. If using, sprinkle frozen mixed vegetables over the top. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and tender.
  5. Fluff the stuffing before serving and garnish with chopped parsley if desired.

Notes

  • For a creamier texture, add an extra ¼ cup sour cream.
  • This dish pairs well with a simple green salad or steamed green beans.
