For the Stuffing:

  • 1 (6 oz) box stuffing mix (like Stove Top)
  • 1 cup low-sodium chicken broth
  • 1 1/2 cups frozen mixed vegetables (optional)

Instructions

  1. Prepare the Chicken: Spray the inside of a 6-quart slow cooker with nonstick spray. Place the chicken breasts in the bottom and season with garlic powder, onion powder, salt, and pepper.
  2. Mix the Sauce: In a medium bowl, whisk together the cream of chicken soup and sour cream until smooth. Spread the mixture evenly over the chicken.
  3. Add the Stuffing: Sprinkle the dry stuffing mix evenly over the top. Pour the chicken broth over the stuffing without stirring.
  4. Cook: Cover and cook on low for 5–6 hours or on high for 3–4 hours, until the chicken is tender. Add vegetables during the last hour of cooking if desired.
  5. Finish and Serve: Before serving, gently mix the stuffing layer into the creamy sauce beneath. Shred or slice the chicken as desired. Serve warm with fresh herbs for garnish.

  • For a richer flavor, use cream of mushroom soup or a blend of both soups.
