Beef Tips:

  • 2 lbs beef stew meat or sirloin tips
  • Salt and pepper to taste
  • 2 tablespoons olive oil

For the Sauce:

  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Garnish:

  • Fresh parsley, chopped (optional)

Instructions

  1. Prepare Beef Tips: Season beef with salt and pepper. Brown beef in batches in a skillet. Transfer to crockpot.
  2. Make the Sauce: Sauté onion, add garlic, then tomato paste. Pour in beef broth, Worcestershire sauce, soy sauce, thyme, and paprika. Simmer and pour over beef in crockpot.
  3. Cook: Cover and cook on low for 7–8 hours or on high for 4–5 hours until tender. Thicken sauce with cornstarch mixture.
  4. Serve: Garnish with parsley before serving.

Notes

  • Serve over mashed potatoes, rice, or egg noodles.
  • For extra richness, stir in a splash of heavy cream or a tablespoon of butter at the end.
