5 pounds apples (peeled, cored, and sliced)

  • 1 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract

Instructions

  1. Place the sliced apples into the crockpot. In a bowl, mix together the granulated sugar, brown sugar, cinnamon, cloves, nutmeg, and salt. Pour the mixture over the apples and stir to coat evenly.
  2. Cover and cook on low for 10 hours, stirring occasionally, until the apples are very soft and dark brown.
  3. Stir in the vanilla extract. Use an immersion blender to puree the mixture until smooth (or transfer to a blender in batches).
  4. Continue cooking uncovered on low for an additional 1–2 hours, stirring occasionally, until thickened to your desired consistency.
  5. Let cool and transfer to jars or airtight containers. Store in the refrigerator for up to 2 weeks or freeze for longer storage.

Notes

  • No need to peel the apples if you plan to blend thoroughly.
  • Use less sugar for a more tart version or add a splash of apple cider for depth.
