Ingredients

Chicken:

  • 1 1/2 pounds boneless skinless chicken breasts

Seasoning:

  • 1 ounce ranch seasoning mix

Salsa Mixture:

  • 2 cups salsa (mild or medium)
  • 8 ounces cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1/2 cup chicken broth or water

Additional:

  • 12 ounces pasta (rotini or penne)
  • Chopped fresh cilantro for garnish (optional)

Instructions

  1. Prepare Chicken: Place chicken breasts in a greased crock pot. Sprinkle with ranch seasoning and pour salsa over the top.
  2. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
  3. Shred & Add Cheese: Shred chicken in the pot, add cream cheese, and stir until melted.
  4. Cook Pasta: Cook pasta separately, then add to crock pot with cheddar cheese.
  5. Combine & Serve: Let ingredients warm through for 10 minutes. Serve hot, garnished with cilantro.

Notes

  • Use whole wheat or gluten-free pasta if needed.
  • For a spicier dish, use hot salsa or add diced jalapeños.
