  • Onion (1 medium, chopped)
  • Jalapeño or poblano pepper (seeded and diced)
  • Garlic cloves (3)
  • Ground cumin (2 tsp)
  • Chili powder (1-2 tsp)
  • Dried oregano (1 tsp)
  • Garlic powder (1 tsp)
  • Salt & black pepper to taste

Additional Ingredients:

  • Cream cheese (4 oz / 110 g, softened)
  • Optional half‑and‑half or Monterey Jack cheese for extra creaminess
  • Fresh lime juice (2 Tbsp)
  • Fresh cilantro (1/4 cup, chopped)

Instructions

  1. Prepare Ingredients: In a 6-quart slow cooker, combine chicken, onion, jalapeño or poblano pepper, garlic, cumin, chili powder, oregano, green chiles, green enchilada sauce, chicken broth, beans, and corn. Season with salt and pepper.
  2. Cook: Cover and cook on low for 4–6 hours (or high for 3–4 hours) until chicken is cooked and tender. Remove, shred chicken, then stir in softened cream cheese until smooth.
