Salmon Bites:
1pound skinless salmon fillet, cut into 1-inch cubes
1/4cup cornstarch
1/4cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper (adjust to taste)
1 large egg, beaten
1/4cup milk
Vegetable oil for frying
Spicy Sauce:
1/4cup mayonnaise
1 tablespoon sriracha or hot sauce
1 teaspoon honey
1 teaspoon lime juice
Instructions
In a shallow bowl, whisk together cornstarch, flour, salt, pepper, paprika, garlic powder, and cayenne. Dredge salmon cubes in this mixture.
In another bowl, combine the beaten egg and milk. Dip each salmon cube into the egg mixture.
Heat vegetable oil in a skillet to 350°F (175°C). Fry salmon bites in batches until golden and crispy.
Mix together mayonnaise, sriracha, honey, and lime juice in a small bowl. Serve the crispy salmon bites hot with the spicy sauce for dipping.
Notes
For a lighter version, air fry the coated salmon at 400°F (200°C) for 8–10 minutes, flipping halfway.
Serve as an appetizer, in tacos, or over rice bowls with fresh veggies.
