2pounds small sweet potatoes, scrubbed
Seasoning:
3 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt

Instructions
Preheat the Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
Boil Sweet Potatoes: Boil the sweet potatoes in salted water for 15–20 minutes until fork-tender but not falling apart. Drain and let cool slightly.
Smash Sweet Potatoes: Place the sweet potatoes on the prepared baking sheet and use the bottom of a glass or potato masher to gently smash them to about 1/2-inch thick.
Season and Roast: Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and black pepper. Roast for 25–30 minutes, flipping halfway through until crispy on the edges.
Garnish and Serve: Garnish with fresh parsley and serve with sour cream or Greek yogurt if desired.
