Sweet Potatoes:

  • 2 pounds small sweet potatoes, scrubbed

  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Garnish:

  • 2 tablespoons chopped fresh parsley
  • Optional toppings: sour cream or Greek yogurt

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Boil Sweet Potatoes: Boil the sweet potatoes in salted water for 15–20 minutes until fork-tender but not falling apart. Drain and let cool slightly.
  3. Smash Sweet Potatoes: Place the sweet potatoes on the prepared baking sheet and use the bottom of a glass or potato masher to gently smash them to about 1/2-inch thick.
  4. Season and Roast: Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and black pepper. Roast for 25–30 minutes, flipping halfway through until crispy on the edges.
