2cups arugula (chopped)

Instructions
Prepare Salmon Sliders: In a small bowl, mix panko, Parmesan, garlic powder, paprika, salt, and pepper. Dip salmon pieces into beaten egg, then coat with panko mixture.
Cook Salmon: Heat olive oil in a skillet over medium-high heat. Add salmon and cook for 2–3 minutes per side until golden and crispy. Set aside.
Make Lemon Arugula Slaw: In a bowl, whisk together lemon juice, olive oil, honey, salt, and pepper. Toss with arugula and cabbage.
Assemble Sliders: Toast buns, spread bottom half with mayo and Dijon, top with salmon, arugula slaw, and bun top. Serve.
