Sweet Potato Stacks:

  • 2 large sweet potatoes, peeled and thinly sliced

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme leaves, plus more for garnish
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F and lightly grease a muffin tin.
  2. Prepare the Sweet Potatoes: In a large bowl, toss sweet potato slices with melted butter, olive oil, garlic powder, thyme, salt, and pepper until evenly coated.
