Instructions

  1. Marinate the Chicken: In a large bowl or zip-top bag, combine the chicken pieces, buttermilk, and hot sauce. Refrigerate for at least 4 hours or overnight.
  2. Prepare the Seasoned Flour: In a separate bowl, whisk together the flour, cornstarch, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper.
  3. Dredge the Chicken: Remove chicken from marinade, dredge in seasoned flour, and press to adhere. Let the coated chicken rest on a rack for 15–20 minutes.
  4. Fry the Chicken: Heat vegetable oil to 350°F (175°C) in a skillet. Fry chicken in batches until golden brown and cooked through, about 14–16 minutes for larger pieces and 10–12 minutes for smaller ones.
  5. Drain and Serve: Drain fried chicken on a wire rack over paper towels for 5 minutes before serving.
