1pound large shrimp (peeled and deveined, tails on or off)
1/2cup cornstarch
2 large eggs (beaten)
1cup panko breadcrumbs
Salt and pepper to taste
Cooking spray or oil for frying
For the Honey Glaze:
1/4cup honey
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon grated fresh ginger
1 clove garlic (minced)
1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
Chopped green onions and sesame seeds for garnish (optional)
Instructions
Prepare the Shrimp: Pat the shrimp dry and season with salt and pepper. Set up a breading station with cornstarch, beaten eggs, and panko breadcrumbs.
Bread the Shrimp: Dredge each shrimp in cornstarch, dip in egg, then coat with panko.
Fry the Shrimp: Fry in oil or air fry until golden and crispy.
Make the Glaze: Combine honey, soy sauce, rice vinegar, sesame oil, ginger, and garlic in a saucepan. Thicken with cornstarch slurry.
Coat the Shrimp: Toss crispy shrimp in the warm glaze until coated.
