  • 1 1/2 to 2 lbs firm white fish fillets (like cod, haddock, or halibut), cut into portions

Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, and paprika.
  2. Prepare Batter: Gradually whisk in the cold sparkling water (and egg if using) until smooth. Let it rest for 10 minutes.
  3. Prep Fish: Pat fish fillets dry and heat oil to 350°F (175°C).
  4. Fry Fish: Dip fish in batter, fry in batches for 4-5 minutes until golden brown and crispy.
