  • 4 chicken breasts, boneless and skinless
  • 2 cups cornflakes, crushed
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a shallow dish, mix the flour, garlic powder, onion powder, paprika, salt, and pepper.
  3. In another shallow dish, beat the eggs.
  4. In a third shallow dish, place the crushed cornflakes (and Parmesan cheese if using).
  5. Coat each chicken breast first in the seasoned flour, then dip in the beaten eggs, and finally coat in the cornflake mixture, pressing gently to adhere the flakes.
  6. Place the coated chicken breasts on the prepared baking sheet and lightly spray with cooking spray to help them crisp up.
  7. Bake for 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F/74°C).
  8. Let the chicken rest for a few minutes before serving. Enjoy your crispy, baked chicken!
