1/2cup all-purpose flour
1/4cup cornmeal
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika (optional)
Wet Ingredients:
2 large eggs
1/4cup milk
Additional Ingredients:
2cups fresh or frozen corn kernels (thawed if frozen)
1cup shredded cheddar cheese
1/4cup chopped green onions
2 tablespoons chopped fresh parsley (optional)
vegetable oil for frying
Instructions
Prepare the Batter: In a large bowl, whisk together the flour, cornmeal, baking powder, salt, pepper, and smoked paprika. In a separate bowl, beat the eggs and milk together. Pour the wet ingredients into the dry ingredients and mix until just combined.
Combine Ingredients: Fold in the corn, shredded cheddar, green onions, and parsley if using.
Fry the Fritters: Heat vegetable oil in a skillet, drop the batter by tablespoons into the hot oil, flatten slightly, and fry for 2–3 minutes per side until golden brown and crispy.
Drain and Serve: Transfer the fritters to a paper towel-lined plate to drain excess oil. Repeat with remaining batter and serve warm with desired dips.
Notes
You can use canned corn, just be sure to drain it well.
Add chopped jalapeños or crumbled bacon for an extra kick.
