1 medium eggplant, peeled and cut into fry-sized sticks
1 teaspoon salt
1/2cup all-purpose flour
2 large eggs, beaten
1cup panko breadcrumbs
1/2cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
cooking spray or olive oil spray

Instructions
Preheat the Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
Prepare Eggplant: Place the eggplant fries in a colander, sprinkle with salt, and let sit for 20 minutes. Rinse and pat dry.
Dredge: Set up a dredging station with flour, beaten eggs, and breadcrumb mixture. Coat each eggplant stick and place on the baking sheet.
Bake: Lightly spray with cooking oil and bake for 20–25 minutes until crispy and golden brown.
Serve: Serve warm with marinara sauce for dipping.
Notes
For a gluten-free version, use almond flour and gluten-free panko.
