Millet Porridge:
1cup millet, rinsed and drained
3cups milk (dairy or plant-based)
1cup water
1/4 teaspoon salt
2 tablespoons maple syrup or honey
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (optional)

Instructions
In a medium saucepan, combine the rinsed millet, milk, water, and salt. Bring to a gentle boil over medium heat, then reduce heat to low, cover, and simmer for 25–30 minutes, stirring occasionally, until the millet is soft and most of the liquid is absorbed.
Stir in the maple syrup or honey, vanilla extract, and cinnamon if using. Cook uncovered for 3–5 more minutes, stirring frequently, until the porridge is thick and creamy.
Remove from heat and let rest for a minute before serving. Spoon into bowls and top with your favorite add-ins.
Notes
For extra creaminess, stir in a splash of cream or coconut milk just before serving.
