Linguine Pasta:
12ounces linguine pasta
Shrimp:
1pound large shrimp, peeled and deveined
Sauce:
2 tablespoons olive oil
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1cup cherry tomatoes, halved
2cups fresh spinach
1/2cup sun-dried tomatoes, chopped
1cup heavy cream
1/2cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1 tablespoon lemon juice
Chopped fresh basil for garnish
Instructions
Cook Linguine: Boil linguine in salted water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
Prepare Sauce: In the same skillet, cook garlic and cherry tomatoes, then add spinach and sun-dried tomatoes. Pour in cream, Parmesan, Italian seasoning, and lemon juice. Simmer until thickened.
Combine: Toss linguine and shrimp in the sauce. Add reserved water if needed.
