  • 1 large yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 8 ounces cremini or button mushrooms, sliced
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg (optional)

For Garnish:

  • Extra Parmesan cheese
  • Fresh thyme

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil and cook tortellini according to package instructions. Drain and set aside.
  2. Caramelize the Onions: Heat olive oil and butter in a large skillet over medium heat. Add the sliced onion and cook until caramelized and golden brown, about 15–20 minutes. Add garlic and cook for 30 seconds.
  3. Sauté the Mushrooms: Add mushrooms to the skillet and sauté for 5–6 minutes until softened and browned. Stir in the spinach and cook until wilted.
  4. Make the Sauce: Reduce heat to low and pour in the heavy cream. Stir in Parmesan cheese, salt, pepper, and nutmeg (if using). Simmer for 2–3 minutes until slightly thickened.
  5. Combine and Serve: Add the cooked tortellini to the skillet and toss to coat. Cook for an additional 1–2 minutes until heated through. Serve warm, garnished with extra Parmesan and fresh thyme.
