Rice:

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Chopped fresh parsley for garnish

Instructions

  1. Prepare Chicken: Season chicken with salt, pepper, paprika, and thyme. Sear in olive oil and butter until golden. Set aside.
  2. Cook Aromatics: Saute onion until soft, then add garlic and cook briefly.
  3. Cook Rice: Add rice to coat with aromatics. Pour in broth, milk, and cream. Simmer.
  4. Combine and Finish: Return chicken to the pan. Simmer until rice is tender. Top with cheese and parsley.
