1 tablespoon butter
Rice:
1 small onion, chopped
2 cloves garlic, minced
1cup long grain white rice
2cups chicken broth
1cup milk
1/2cup heavy cream
1/2cup shredded cheddar cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon dried thyme
Chopped fresh parsley for garnish
Instructions
Prepare Chicken: Season chicken with salt, pepper, paprika, and thyme. Sear in olive oil and butter until golden. Set aside.
Cook Aromatics: Saute onion until soft, then add garlic and cook briefly.
Cook Rice: Add rice to coat with aromatics. Pour in broth, milk, and cream. Simmer.
Combine and Finish: Return chicken to the pan. Simmer until rice is tender. Top with cheese and parsley.
Notes
You can substitute brown rice, adjusting cooking time and liquid amount.
For added vegetables, stir in peas or spinach in the last 5 minutes of cooking.
