Potato Layer:

  • 4 large russet potatoes, thinly sliced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Cheese Sauce:

  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Topping:

  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C) and butter a baking dish.
  2. Prepare Potatoes: In a saucepan, combine heavy cream, milk, garlic, salt, and pepper. Heat until just simmering. Add the potato slices, stir gently, and cook for about 5 minutes until slightly tender.
  3. Make Cheese Sauce: In a separate saucepan, melt butter, whisk in flour, then gradually whisk in the milk mixture until smooth. Stir in cheddar cheese, paprika, salt, and pepper until cheese melts and sauce is creamy.
  4. Layer and Bake: Arrange a layer of potatoes in the baking dish, spoon over some cheese sauce, then repeat layers. Top with Parmesan cheese. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden.
  5. Serve: Let the scalloped potatoes rest for a few minutes, garnish with parsley, and serve hot.

Notes

  • You can add thinly sliced onions or crispy bacon between the potato layers for extra flavor.
  • For a lighter version, you can use half-and-half or whole milk instead of heavy cream.
  • Allow the dish to rest for about 10 minutes after baking to set before serving.
