- 12 oz pasta (penne or rigatoni)
- 1 lb Italian sausage (casings removed)
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it into pieces with a spoon.
- Add the chopped onion and cook until softened, about 3-4 minutes. Stir in garlic and red pepper flakes, cook for 1 minute.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
- Add the heavy cream and bring to a simmer. Stir in Parmesan cheese and Italian seasoning.
- Simmer the sauce for 5-7 minutes until slightly thickened. Season with salt and pepper to taste.
- Add the cooked pasta to the skillet and toss to coat evenly with the sauce.
- Serve hot, garnished with chopped fresh parsley.
Notes
- You can use spicy Italian sausage for an extra kick.
- For a lighter version, substitute half-and-half for heavy cream.
- Great with a side of garlic bread or a green salad.
