12oz pasta (penne or rigatoni)
1lb Italian sausage (casings removed)
1 tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1/2 tsp red pepper flakes (optional)
1cup heavy cream
1/2cup chicken broth
1/2cup grated Parmesan cheese
1/2 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Cook the pasta according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it into pieces with a spoon.
Add the chopped onion and cook until softened, about 3-4 minutes. Stir in garlic and red pepper flakes, cook for 1 minute.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
Add the heavy cream and bring to a simmer. Stir in Parmesan cheese and Italian seasoning.
Simmer the sauce for 5-7 minutes until slightly thickened. Season with salt and pepper to taste.
Add the cooked pasta to the skillet and toss to coat evenly with the sauce.
Serve hot, garnished with chopped fresh parsley.
Notes
You can use spicy Italian sausage for an extra kick.
For a lighter version, substitute half-and-half for heavy cream.
Great with a side of garlic bread or a green salad.
