Description

A quick and delicious one-pot creamy salmon and spinach pasta, perfect for weeknight dinners with minimal cleanup.


Ingredients

  • 8 oz (225g) pasta (penne or fusilli)
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1/2 tsp chili flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups cooked salmon, flaked
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1/2 lemon, juiced
  • Fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion until translucent, about 3 minutes.
  2. Add garlic and chili flakes; cook for 1 minute until fragrant.
  3. Pour in the heavy cream and milk; bring to a simmer.
  4. Add the pasta to the pot and stir well. Cover and cook for 10-12 minutes, stirring occasionally, until pasta is tender.
  5. Stir in Parmesan cheese until melted and sauce thickens.
  6. Add spinach and flaked salmon; cook for another 2-3 minutes until spinach wilts and salmon is heated through.
  7. Season with salt, pepper, and lemon juice to taste.
  8. Garnish with parsley and serve hot.

Notes

  • Use fresh or canned salmon depending on availability.
  • Add mushrooms or peas for extra veggies.
  • For a lighter version, use half-and-half instead of cream.
