8oz pasta
1cup cherry tomatoes, halved
1/2cup cucumber, diced
1/4cup red onion, thinly sliced
1/4cup black olives, sliced
1/4cup feta cheese, crumbled
Creamy Ranch Dressing:
1/2cup Greek yogurt
2 tbsp mayonnaise
2 tbsp ranch seasoning mix
1–2 tbsp milk
Salt and pepper to taste
Protein:
1 grilled chicken breast, diced
1/2cup chickpeas, drained and rinsed
Instructions
Cook Pasta: Boil pasta according to package instructions. Drain and let cool.
Make Dressing: In a bowl, mix Greek yogurt, mayonnaise, ranch seasoning, milk, salt, and pepper until smooth.
Assemble Salad: In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, black olives, feta cheese, grilled chicken, and chickpeas.
Add Dressing: Pour the creamy ranch dressing over the salad and toss until well coated.
