Bacon Topping:

  • 4 slices bacon, diced

Soup:

  • 1 tbsp unsalted butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 lbs russet potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp chopped fresh chives

Instructions

  1. Bacon Topping: In a large pot, cook diced bacon until crispy. Remove bacon and set aside.
  2. Leave about 1 tablespoon of drippings in the pot.

  3. Soup: Add butter and onion to the pot; cook until softened. Stir in garlic, then add potatoes, chicken broth, salt, pepper, and thyme. Bring to a boil, then simmer until potatoes are tender.
  4. Using an immersion blender, blend soup until smooth or blend half for a chunkier texture. Stir in heavy cream, sour cream, and cheddar cheese until creamy.
  5. Taste and adjust seasoning if needed. Serve hot, topped with crispy bacon and chives.

Notes

  • For extra richness, replace half of the chicken broth with whole milk.
  • This soup freezes well; cool completely before storing.
