Creamy Lemon & Herb Salmon

A flavorful and creamy salmon dish infused with fresh lemon and aromatic herbs, perfect for a quick and healthy dinner.

  • 4 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 lemon, zested and juiced
  • 1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. In a large skillet over medium heat, heat the olive oil.
  3. Add the salmon fillets, skin-side down, and cook for 4-5 minutes per side or until cooked through. Remove and set aside.
  4. In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
  5. Pour in the heavy cream, Dijon mustard, lemon juice, and lemon zest. Stir to combine.
  6. Simmer the sauce for 2-3 minutes, then add the dill, parsley, and red pepper flakes (if using).
  7. Return the salmon to the skillet and spoon the sauce over the fillets. Cook for another 2 minutes to heat through.
  8. Serve hot with your favorite side dish.

Notes

  • You can substitute Greek yogurt or coconut cream for a lighter or dairy-free version.
  • Fresh herbs give the best flavor, but dried can be used in a pinch.
  • Serve with rice, mashed potatoes, or steamed vegetables for a complete meal.
