For the Tortellini:

  • 2 tablespoons olive oil
  • 1 lb boneless skinless chicken breast, cut into bite-sized pieces
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 2 cups broccoli florets
  • 1/2 cup chicken broth

For the Sauce:

  • 1 1/2 cups heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1 (20 oz) package refrigerated cheese tortellini
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, adding the broccoli florets during the last 2–3 minutes of cooking. Drain and set aside.
  2. Cook the Chicken: In a skillet, heat olive oil. Season chicken with salt and pepper, cook until golden and cooked through. Remove and set aside.
  3. Make the Sauce: In the same skillet, cook minced garlic, add chicken broth, heavy cream, and Parmesan. Simmer until thickened.
  4. Combine and Serve: Return chicken, tortellini, and broccoli to the skillet. Simmer until heated through. Serve garnished with parsley and red pepper flakes.

  • For a lighter option, use half-and-half instead of heavy cream.
  • Add mushrooms or sun-dried tomatoes for extra flavor.
