For the Tortellini:
2 tablespoons olive oil
1lb boneless skinless chicken breast, cut into bite-sized pieces
Salt and pepper to taste
3 cloves garlic, minced
2cups broccoli florets
1/2cup chicken broth
For the Sauce:
1 1/2cups heavy cream
3/4cup grated Parmesan cheese
1 (20 oz) package refrigerated cheese tortellini
1/4 teaspoon crushed red pepper flakes (optional)
Fresh parsley, chopped, for garnish
Instructions
Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, adding the broccoli florets during the last 2–3 minutes of cooking. Drain and set aside.
Cook the Chicken: In a skillet, heat olive oil. Season chicken with salt and pepper, cook until golden and cooked through. Remove and set aside.
Make the Sauce: In the same skillet, cook minced garlic, add chicken broth, heavy cream, and Parmesan. Simmer until thickened.
Combine and Serve: Return chicken, tortellini, and broccoli to the skillet. Simmer until heated through. Serve garnished with parsley and red pepper flakes.
Notes
For a lighter option, use half-and-half instead of heavy cream.
Add mushrooms or sun-dried tomatoes for extra flavor.
Leftovers reheat well with a splash of milk to loosen the sauce.
