4 large onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
Salt and pepper to taste
For Soup Base:
1pound mushrooms, sliced
4 cloves garlic, minced
6cups beef or vegetable broth
1cup heavy cream
2 tablespoons flour
2 tablespoons fresh thyme leaves

Instructions
Caramelize the Onions: In a large pot, melt butter with olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until deep golden brown and caramelized.
Cook the Mushrooms: Add mushrooms to the pot and cook until they release their liquid and start to brown.
Add Ingredients: Stir in garlic, thyme, and flour. Cook for a few minutes until flour is incorporated.
Pour Broth: Gradually pour in the broth, stirring constantly. Simmer for about 20 minutes.
Blend: Use an immersion blender to blend the soup until smooth.
Finish: Stir in heavy cream, season with salt and pepper, and simmer for another 10 minutes.
