Creamy Crockpot Tortellini is a delicious and comforting pasta dish made with Italian sausage, cheese tortellini, spinach, and a creamy tomato sauce. This easy slow cooker recipe is perfect for a satisfying weeknight meal.

Italian Sausage Mixture:

  • 1 pound Italian sausage (mild or spicy, casings removed)
  • 1 small onion, diced
  • 3 cloves garlic, minced

Sauce:

  • 1 can (14.5 ounces) diced tomatoes with juices
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 4 cups fresh spinach, roughly chopped
  • 1 package (20 ounces) refrigerated cheese tortellini
  • 1 block (8 ounces) cream cheese, cubed
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook Italian Sausage: In a skillet over medium heat, cook the Italian sausage until browned, breaking it up as it cooks. Add the onion and garlic and sauté for 2–3 minutes until softened.
  2. Prepare Crockpot: Transfer the sausage mixture to a crockpot. Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Cover and cook on low for 4–5 hours.
  3. Add Remaining Ingredients: About 30 minutes before serving, stir in the spinach, tortellini, cream cheese, and heavy cream. Mix gently to combine. Cover and cook on high for 20–30 minutes more, or until the tortellini is tender and the cheese is fully melted.
  4. Finish and Serve: Stir in Parmesan cheese just before serving.

Notes

  • For a vegetarian version, skip the sausage and add sautéed mushrooms or zucchini.
  • Frozen tortellini can be used—just add them straight from the freezer during the last 30 minutes.
