Beef Tips:
2pounds beef stew meat (cut into 1-inch cubes)
1 tablespoon olive oil
Mushroom Mixture:
1 small onion (diced)
3 cloves garlic (minced)
2cups sliced mushrooms
Creamy Sauce:
1 (10.5 oz) can cream of mushroom soup
1 (1 oz) packet dry onion soup mix
1cup beef broth
1 tablespoon Worcestershire sauce
1/2 teaspoon black pepper
1/2cup sour cream
Additional:
Chopped parsley for garnish (optional)
Cooked egg noodles or mashed potatoes for serving
Instructions
Prepare Beef: In a large skillet, sear the beef cubes in olive oil until browned. Transfer to the crockpot.
Layer Ingredients: Add onion, garlic, and mushrooms over the beef in the crockpot.
Mix Sauce: Whisk cream of mushroom soup, onion soup mix, beef broth, Worcestershire sauce, and pepper. Pour over the ingredients in the crockpot.
Cook: Cover and cook on low for 7–8 hours or high for 4–5 hours until beef is tender.
Finish: Stir in sour cream 15 minutes before serving. Serve over noodles or potatoes, garnished with parsley.
Notes
For a richer sauce, heavy cream can be used instead of sour cream.
