Ingredients
Scale
Pasta
- 8 oz (225g) pasta of your choice (spaghetti, fettuccine, etc.)
Sauce
- 2 tablespoons chili oil (adjust to taste)
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, for extra heat)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Garnish
- Fresh parsley, chopped
- Crushed red pepper flakes (optional)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Reserve 1/2 cup of the pasta cooking water before draining and set the pasta aside.
- Prepare the Sauce Base: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes if using, sautéing until fragrant, about 1-2 minutes. Be careful not to burn the garlic.
- Add Chili Oil: Stir in the chili oil and cook for an additional minute to infuse the flavors.
- Create the Creamy Sauce: Lower the heat to low and slowly pour in the heavy cream while stirring continuously to prevent curdling. Add the grated Parmesan cheese and stir until the cheese melts and the sauce thickens smoothly. Season with salt and pepper to taste.
- Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss thoroughly to coat it evenly with the creamy chili oil sauce. If the sauce is too thick, gradually add the reserved pasta water a little at a time until you reach your desired sauce consistency.
- Serve: Plate the pasta immediately, garnishing with fresh chopped parsley and extra crushed red pepper flakes if desired for added heat. Enjoy while warm.
Notes
- Reserve pasta water is key for adjusting sauce consistency without diluting flavor.
- Adjust chili oil amount according to your preferred spice level.
- Freshly grated Parmesan will melt smoother and give better flavor than pre-grated.
- Use gluten-free pasta to make this recipe gluten-free if needed.
- For a dairy-free option, substitute heavy cream and Parmesan with plant-based alternatives.
